Easy Fruit Salad
Take a small bowl. Whisk together orange juice, honey, and lemon zest. Add some fruit to a large bowl and pour over the dressing. Toss gently to combine. Chill until ready to serve.
Jalapeño Popper Creamed Corn
Combine sour cream and cheese in a large bowl. Season with some garlic powder, chili powder, salt, and pepper.
Heat oil over medium-high heat in a large skillet. Add corn and cook. Keep stirring occasionally for about 5 minutes, until the corn is golden and lightly seared.
Add corn to the cream cheese mixture. Let the whole mixture cool slightly.
Add cheddar, bacon, green onions, and jalapeños. Toss to coat well. Garnish with more bacon and some sliced jalapeño.
Loaded Greek Hummus
This is a quick one! Simply combine chickpeas with tahini, garlic, olive oil, lemon juice, ¼ cup of the feta, dill, and 3 tablespoons water, in a food processor. Blend until smooth. Season with salt and pepper.
Transfer the hummus to a shallow serving bowl. Top it with olives, tomatoes, cucumbers, and another ¼ cup of feta. Drizzle it with olive oil and lemon juice. And some salt and pepper seasoning. Serve with pita.
